Chef Ryan Manning’s unassuming little shop on Bumby belies his culinary cred, which includes heading up the Ritz-Carlton Cancun’s Culinary Center Team. During his time in Mexico, he fell in love not just with the nation, but also with its eats — and the incredible diversity between the regions. These differences are something he showcases in the fare at his taquerias (he’s since opened another in Waterford Lakes), including tacos representative of Oaxaca, Puebla, Sonora and beyond.
