Taco Tuesday: Here’s your new favorite shrimp taco

At The Taco Stand in downtown Orange, almost everyone focuses on the tacos al pastor carved to order from the trompo. And that’s not a bad move. The pork al pastor is very, very good.

But the taco I like even better here is the “spicy shrimp” taco. This is a beautiful, contemporary riff on a classic taco gobernador. The house-made tortilla is lined with white cheese that’s been fried just to the edge of burntness, giving it an incredibly nutty, smoky, crispy character. The perfectly griddled shrimp are coated in a chili powder that distinctly reminds me of Louisiana blackening spice. It’s topped with chopped cabbage, thick chunks of avocado and a generous dollop of mild chipotle crema.

This is literally a perfect taco, and it absolutely nails that over-the-top Tijuana-style, sloppy-but-not-too-sloppy taco vibe.
